I woke up this morning having the best night sleep I've had in a while. I wasn't my typical sluggish self. All day I felt good. Now I realize, that after just one day this is probably coincidental but maybe it's not.
I had the same cereal with blueberries for breakfast that I had yesterday. For lunch I had the leftover stuffed zucchini which, even after given a second chance, wasn't very good. It is filling, however.
I snacked on a handful of pistachios and almonds and had a couple thin corn cakes in the afternoon.
I did feel hungry when I got home from work and was glad when my husband suggested going out for a little while and walking around Khol's (he needed to get out of the house, he works from home).
I had some corn chips and guacamole before dinner while I read "day 2" of my book. I made a pitcher of peppermint tea so I could have something different.
Dinner was spaggetti squash with diced zuccini and organic pasta sauce and two ears of corn on the cob with a little earth balance vegan butter (which by the way, tastes like butter). It was filling and very tasty.
There was an article in the Charlotte Observer today about a family of 4 that is going 100 days eating only whole foods. The lady who wrote it also has a blog. They are on day 60. I read a few postings and saved it to 'my favorites' to explore later and maybe get some recipe ideas.
Tomorrow is Wednesday and usually when I start feeling the need for a glass of wine. But I won't think about tomorrow. I just need to take it one day at a time.
